TIC–TAC: Ne apropiem de lansarea Prosecco-ului Rosé

În mai puțin de două luni Casa Bottega va marca un moment istoric în lumea complexă a băuturilor: lansarea prosecco-ului rosé, un vin spumant brut, realizat dintr-un amestec de Glera și Pinot Noir.
Strugurii din care se face acest produs inovator sunt crescuți în provincia Treviso și în Friuli Venezia Giulia, zone care se disting printr-un climat blând și soluri argiloase, de origine aluvială, bogate în minerale. Ei sunt cultivați conform tehnicilor clasice și tradiționale atunci când analizele senzoriale efectuate asupra boabelor și indicele de coacere arată o aciditate naturală și o bună mineralitate, indusă de sol.
Deoarece
cele două soiuri au timp de coacere diferit, vinificarea se face separat. Strugurii
Glera sunt recoltați, în general, la mijlocul lunii septembrie. Aceștia sunt
desprinși, presați ușor și, apoi, mustul este curățat. Prima fermentare are loc
în rezervoare de oțel, după adăugarea de drojdii selectate. În schimb,
strugurii din soiul Pinot Noir sunt recoltați la sfârșitul lunii august. O macerare
pre-fermentativă de aproximativ 12-16 ore se efectuează în contact cu pielițele pentru a extrage culoarea. Mustul este apoi separat de pielițe și fermentat la o
temperatură controlată.
Cele
două vinuri obținute sunt ulterior amestecate și refermentate conform metodei
Martinotti, la o temperatură controlată de 15-16 °C, procesul de refermentare având
o durată medie de două luni.
În
final rezultă un prosecco rose sidef, cu perlaj fin, persistent, și gust fresh
și delicat. Acesta are un buchet bogat în arome fructate, dintre care se
disting notele de măr, piersică albă, citrice și căpșuni sălbatice, și note
florale, de exemplu florile de piersic.
Potrivit
recomandărilor, puteți consuma prosecco rose ca
aperitiv sau pe parcursul întregii mese. Specialiștii mai spun că acest vin se
potrivește bine cu mâncăruri reci și ușoare, cum ar fi o salată caprese, dar
poate acompania și feluri principale nu prea elaborate, de exemplu carne albă
la grătar. În plus, este perfect cu pește crud și sushi, ori în combinație cu
pizza.
